Chocolate Coconut Energy Bites

This is a super simple, healthy recipe that is also fun to make with your kids. My son helped me to create this one, because he said MORE chocolate, and honestly, how do you disagree with that?! I am not one to write a long lengthy post for a recipe, because, as moms, we do not have time for that. So here are some quick tips for you to make and then just use the recipe to recreate for yourself. They are the perfect healthy bite of sweet for both you and your littles! =)

QUICK TIPS:

➳ I use cashew butter as I find it has a more neutral taste, but these also go great with Almond butter and amp up the “almond joy” type of flavor!

➳ You can use coconut nectar as a sweetener instead of maple syrup, I wouldn’t use honey as that can change the taste of the treat!

➳ Use a melon baller to scoop  out into even pieces and roll into balls, this is also the perfect taste for little hands! Then have them roll it in the coconut - WARNING- if you have multiple toddlers, like I do, be prepared for your floor to be covered in a white blanket of coconut flakes … (it’s worth it!)

RECIPE:

Ingredients

¾ Cups Rolled Oats (for gluten free option, be sure your oats are labeled GF!)

¼ cup Flax (ground)

½ cup shredded coconut + extra for rolling

¼ cup cacao powder

½ cup cashew butter

¼ cup maple syrup

Pinch of salt (if nut butter is unsalted, otherwise omit)

½ cup mini chocolate chips*

*use Enjoy Life chips for dairy/allergy free version

Directions

  • Measure out all ingredients in a bowl, stir until well blended

  • Scoop using your melon baller or spoon, roll into balls 

  • Roll in coconut shredded coconut

  • Let set in fridge for about 20-30 mins


➳ You can store these in an airtight container for up to 3 days!
